Sheet-Pan Honey Chicken with Apples

Apples usually get the dessert treatment, but roast them hard in a hot oven next to chicken and they turn into something savory — jammy, caramel-edged wedges that have more in common with roasted onion than apple pie. Honey is the natural bridge between the two, but honey alone leans cloying, so Dijon mustard and a splash of apple cider vinegar do the savory heavy lifting: the mustard brings a slow, nose-clearing heat and the vinegar keeps the whole pan bright and balanced instead of sticky-sweet. A pinch of cayenne nudges it toward true sweet-heat, and because everything shares one sheet pan, the apples and onions braise in the chicken's rendered fat — which is where all the flavor hides. It's the hands-off savory sibling to our Creamy Apple Cider Chicken Skillet, and it plays nicely alongside a Caesar Side Salad or a pile of Air Fryer Brussels Sprouts.

Ingredients

  • For the glaze:
  • ¼ cup honey
  • 3 tablespoons Dijon mustard
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • ¼ teaspoon cayenne pepper
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • For the chicken and apples:
  • 8 bone-in, skin-on chicken thighs (about 2½ pounds)
  • 3 medium apples (such as Honeycrisp or Pink Lady), cored and cut into ½-inch wedges
  • 1 large red onion, cut into 1-inch wedges
  • 6 fresh thyme sprigs, plus more for garnish
  • flaky sea salt, for finishing (optional)

Steps

  1. Heat the oven to 425°F with a rack in the center. Line a large rimmed baking sheet with parchment paper or foil for easy cleanup.
  2. Make the glaze: In a small bowl, whisk together the honey, Dijon mustard, apple cider vinegar, olive oil, garlic, cayenne, salt, and pepper until smooth. Set aside 2 tablespoons of the glaze in a separate small bowl for finishing.
  3. Pat the chicken thighs dry with paper towels and season them lightly all over with a pinch of salt and pepper. In a large bowl, toss the chicken thighs, apple wedges, and onion wedges with the remaining glaze until everything is evenly coated.
  4. Spread the chicken skin-side up in a single layer on the prepared sheet pan, then scatter the apple and onion wedges around (not on top of) the chicken so they brown rather than steam. Tuck the thyme sprigs among the apples and onions.
  5. Roast for 25 minutes. Remove the pan and brush the reserved 2 tablespoons of glaze over the chicken skin, then return to the oven and roast until the chicken is deeply golden and cooked through — an instant-read thermometer inserted into the thickest part of a thigh (not touching bone) reads 165°F — 10 to 15 minutes more. The apples should be tender and caramelized at the edges.
  6. Let the chicken rest on the pan for 5 minutes so the juices settle and carryover cooking finishes the job. Spoon the pan juices over the chicken, scatter with fresh thyme leaves and a pinch of flaky sea salt, and serve straight from the pan.

Tips & Variations

Make Ahead

The glaze can be whisked together and refrigerated in a sealed jar for up to 5 days. The chicken can be seasoned and coated in the glaze up to 2 hours ahead — keep it covered in the refrigerator. Cut the apples and onion just before roasting so the apples don't brown and soften; if you must prep them earlier, toss the apple wedges in a squeeze of lemon juice and refrigerate for up to 4 hours.

Storage

Refrigerate leftovers in an airtight container for up to 4 days. Reheat in a 350°F oven for 10 to 12 minutes, or in a covered skillet with a splash of water or broth to loosen the glaze. The skin softens on reheating, but the meat stays juicy and the apples get even more caramelized.

Substitutions

Boneless, skinless thighs work — pull them at 165°F after about 22 to 25 minutes total and skip the skin-brushing step (just brush on the reserved glaze at the end). Chicken breasts should be pounded to an even ¾-inch thickness and pulled at 160°F before resting. Swap the honey for maple syrup for a deeper, toastier sweetness, or use whole-grain mustard for extra texture and bite. Pears can stand in for apples, though they're softer, so add them halfway through roasting. No apple cider vinegar? White wine or sherry vinegar both work. For less heat, skip the cayenne entirely; for more, add a pinch of crushed red pepper flakes with the glaze.
