  • For the sheet pan:
  • 1 (12-ounce) package fully-cooked chicken sausage (about 4 links), sliced into ½-inch rounds
  • 1 large sweet potato, peeled and diced into ½-inch cubes (about 2½ cups)
  • 1 head broccoli, cut into small florets (about 3 cups)
  • 1 red bell pepper, seeded and diced
  • 1 small red onion, cut into ½-inch wedges
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • ¾ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • For the bowls:
  • 1 cup dry quinoa, rinsed
  • 1¾ cups water or low-sodium chicken broth
  • 4 cups baby spinach or mixed greens
  • For the lemon-tahini sauce:
  • ¼ cup tahini, well stirred
  • 2 tablespoons fresh lemon juice
  • 1 small clove garlic, grated or minced
  • ¼ teaspoon kosher salt
  • 3 –4 tablespoons warm water, to thin
  • Optional toppings: crumbled feta, toasted pumpkin seeds, or a squeeze of lemon

Steps

  1. Preheat the oven to 425°F with a rack in the center. Line a large rimmed sheet pan with parchment paper or foil for easy cleanup.
  2. Cook the quinoa: Combine the rinsed quinoa and water (or broth) in a small saucepan with a pinch of salt. Bring to a boil over high heat, then reduce to low, cover, and simmer until the liquid is absorbed and the quinoa is fluffy, about 15 minutes. Remove from heat and let it steam, covered, for 5 minutes, then fluff with a fork.
  3. Roast the sheet pan: On the prepared sheet pan, toss the sliced sausage, sweet potato, broccoli, bell pepper, and red onion with the olive oil, garlic powder, smoked paprika, salt, and black pepper until everything is evenly coated. Spread into a single even layer — if the pan is crowded, use two pans so the vegetables roast instead of steam.
  4. Roast for 22–25 minutes, tossing once halfway through, until the sweet potato is tender and the broccoli and sausage have caramelized, browned edges. Remove from the oven and let cool for a few minutes.
  5. Make the sauce: While the sheet pan roasts, whisk together the tahini, lemon juice, garlic, and salt in a small bowl. Whisk in the warm water a tablespoon at a time until the sauce is smooth and pourable — it will look broken at first, then come together into a creamy dressing.
  6. Assemble the bowls: Divide the quinoa among four meal-prep containers, then top each with a handful of spinach and a generous scoop of the roasted sausage and vegetables. Drizzle with the lemon-tahini sauce (or pack it separately if you prefer to dress at lunchtime).
  7. To serve warm, reheat the sausage and vegetable portion for 1–2 minutes in the microwave and spoon over the quinoa. Finish with feta, pumpkin seeds, or a squeeze of lemon if you like.

Make Ahead

This recipe is designed for meal prep — assemble all four bowls (including the spinach and sauce) up to 4 days ahead and refrigerate. The roasted vegetables and quinoa hold their texture well, and the tahini sauce stays creamy. If you'd rather reheat the whole bowl, pack the sauce and spinach separately and add them after warming.

Storage

Refrigerate assembled bowls in airtight containers for up to 4 days. Reheat the sausage and vegetable portion in the microwave for 1–2 minutes before serving. The lemon-tahini sauce keeps in a sealed jar in the fridge for up to 5 days — thin with a little warm water if it thickens. Not recommended for freezing.

Substitutions

Use any fully-cooked sausage — chicken apple, turkey, or smoked — or swap in 1 pound of cubed raw chicken breast tossed with the same seasonings (add 5 minutes to the roast time). Sweet potato can be replaced with butternut squash or baby potatoes. Swap broccoli for cauliflower or green beans, and red pepper for any color. Use farro, brown rice, or couscous instead of quinoa (adjust cooking time accordingly). For a dairy-free bowl, skip the feta. Add a handful of chickpeas to the sheet pan for extra plant protein.
