Smash Burger (Crispy, Diner-Style)
A smash burger gets its character from the crust — press a ball of ground beef onto a screaming-hot griddle and leave it alone until a deeply browned, lacy edge forms. Flip once, add cheese immediately, and stack on a soft potato roll. No thick patties, no medium-rare.

Ingredients
- 1 pound ground beef, 80/20
- Kosher salt and freshly ground black pepper
- 4 slices American cheese
- 4 soft potato rolls, split
- 2 tablespoons unsalted butter, softened
- For the special sauce:
- ¼ cup mayonnaise
- 2 tablespoons ketchup
- 1 tablespoon dill pickle relish
- 1 teaspoon yellow mustard
- ¼ teaspoon garlic powder
- ¼ teaspoon smoked paprika
- Toppings:
- 4 leaves iceberg lettuce, shredded
- 8 dill pickle slices
- ½ small white onion, thinly sliced
Steps
- Divide beef into 4 equal portions (4 oz each) and roll loosely into balls — do not overwork the meat. Refrigerate while you prepare the rest.
- Make the special sauce: stir together mayonnaise, ketchup, relish, mustard, garlic powder, and paprika. Set aside.
- Heat a large cast-iron skillet or flat-top griddle over high heat until smoking hot. You want it ripping hot — this is critical for the crust.
- Butter the cut sides of the rolls. Toast in the skillet, butter-side down, until golden, about 1 minute. Set aside.
- Place a beef ball on the hot skillet and immediately smash it flat with a sturdy metal spatula, pressing hard for a full 10 seconds until it's about ¼-inch thick and the edges are lacy. Season generously with salt and pepper. Repeat with remaining balls (work in batches if needed).
- Cook without moving for 2–3 minutes until the edges are deep brown and crispy. Scrape under the patty firmly to preserve the crust, flip, and immediately lay a slice of American cheese on top. Cook 1 minute more.
- Assemble: spread special sauce on both sides of the bun. Stack two patties per burger (if you're going all-in), or one per bun. Top with shredded lettuce, pickles, and onion slices. Serve immediately.
