Hot Honey Compound Butter Board

This is butter reimagined: rich salted butter whipped until it's light and airy, then folded with hot honey and a spoonful of chili crisp so every swipe lands sweet first and warm second. The trick is starting with butter at a cool room temperature — too cold and it seizes in the beaters, too warm and it turns greasy — and folding the honey in by hand at the end so it ribbons through instead of blending into a single uniform spread. Smear it across a board in loose, swooping peaks, shower it with flaky salt and toasted pecans, and ring the whole thing with warm bread and crisp fall fruit for the easiest centerpiece of the season.

Ingredients

  • For the compound butter:
  • 1 cup (2 sticks) unsalted butter, softened to cool room temperature
  • 3 tablespoons hot honey, plus more for drizzling
  • 1 tablespoon chili crisp (store-bought or homemade), plus more to taste
  • ½ teaspoon flaky sea salt, plus more for finishing
  • 1 teaspoon fresh lemon juice (optional, to brighten)
  • For the board:
  • ½ cup pecans, toasted and roughly chopped
  • 1 baguette or small loaf of sourdough, sliced and warmed
  • 1 crisp apple (Honeycrisp or Gala), thinly sliced
  • 1 ripe but firm pear, thinly sliced (optional)
  • 4 to 5 radishes, thinly sliced

Steps

  1. Soften the butter: If it's still firm, cut the butter into cubes and let it sit at room temperature for 20 to 30 minutes. It should dent easily when pressed but still hold its shape — not glossy or melting.
  2. Whip the butter: In a stand mixer fitted with the paddle attachment (or a large bowl with a hand mixer), beat the butter on medium-high speed until light, pale, and fluffy, 2 to 3 minutes, scraping down the bowl once.
  3. Add the flavor: Pour in the hot honey, chili crisp, flaky salt, and lemon juice (if using). Beat on low just until combined, 20 to 30 seconds, then fold once or twice by hand with a spatula so the honey stays in visible ribbons rather than blending in completely. Taste and adjust with more chili crisp or salt.
  4. Toast the pecans: In a small dry skillet over medium heat, toast the pecans, shaking the pan often, until fragrant and lightly browned, 3 to 4 minutes. Transfer to a plate to cool, then roughly chop.
  5. Build the board: Scoop the whipped butter onto a wooden board or large plate and spread it into swooping peaks with the back of a spoon. Drizzle with a little extra warm honey, then sprinkle with the toasted pecans and a final pinch of flaky sea salt.
  6. Arrange the dippers: Tuck the warm bread slices, apple, pear (if using), and radishes around the butter and serve immediately, encouraging everyone to swipe generously.

Tips & Variations

Make Ahead

The compound butter can be made up to 1 week ahead: scrape it onto a sheet of parchment, roll it into a log, and refrigerate, or freeze for up to 3 months. Bring it back to room temperature and give it a quick re-whip before spreading. Toast the pecans up to 3 days ahead and store them in an airtight container at room temperature.

Storage

Refrigerate leftover compound butter in an airtight container for up to 2 weeks, or freeze for up to 3 months. Store leftover bread, fruit, and radishes separately — the fruit is best sliced just before serving. To revive refrigerated butter, let it sit at room temperature for 30 minutes before serving.

Substitutions

No hot honey? Whisk 3 tablespoons honey with ½ teaspoon cayenne or a few dashes of hot sauce. For a miso-maple version, swap the hot honey for 1 tablespoon maple syrup plus 1 tablespoon white miso and skip the chili crisp, finishing with toasted sesame seeds. Use a plant-based butter for a dairy-free board. Any crisp, sweet-tart fruit works in place of the apple and pear — try persimmons, figs, or pomegranate arils. For a heartier board, add roasted delicata squash or sweet potato wedges (roasted ahead) alongside the bread. A crumble of goat cheese or feta on the board is a nice salty contrast.
