Turkey Club Sandwich
The club sandwich is all about structure — three slices of toasted bread, layered so every bite includes turkey, bacon, lettuce, and tomato. A thin spread of mayo on each slice seals the bread against moisture and adds richness. Cut into triangles and secure with picks.

Ingredients
- 6 slices white or sourdough bread, sliced
- 8 ounces roasted turkey breast, thinly sliced
- 6 slices thick-cut bacon
- 1 large ripe tomato, sliced into rounds
- 4 romaine or iceberg lettuce leaves
- 3 tablespoons good-quality mayonnaise
- kosher salt
- freshly ground black pepper
Steps
- Cook the bacon in a large skillet over medium heat until crisp, 8 to 10 minutes. Transfer to a paper-towel-lined plate.
- Toast all 6 slices of bread until golden brown.
- Spread mayonnaise on one side of each toast slice.
- For each club, lay out the first slice of toast (mayo side up). Season the tomato slices with a pinch of salt and pepper, then layer half the turkey, 2 lettuce leaves, and half the tomato slices. Top with a second slice of toast (mayo side up).
- On the second slice, layer the bacon (3 slices, broken to fit), then the third slice of toast (mayo side down).
- Press down gently, insert 4 toothpicks near the corners, and cut diagonally both ways to make 4 triangular quarters. Serve immediately with chips or a pickle spear.
