  • For the streusel:
  • ⅓ cup (40g) all-purpose flour
  • ¼ cup (50g) packed light brown sugar
  • ¼ teaspoon ground cinnamon
  • ¼ teaspoon ground cardamom

  • 2 medium plums (about 8 oz / 230g), pitted and cut into ½-inch pieces
  • 4 fresh figs (about 5 oz / 140g), stemmed and quartered
  • ¾ cup (75g) fresh or frozen cranberries
  • 2 tablespoons granulated sugar
  • 2 teaspoons cornstarch
  • For the batter:
  • 2 cups (240g) all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon fine sea salt
  • ½ cup (1 stick / 113g) unsalted butter, softened
  • ¾ cup (150g) granulated sugar
  • 2 large eggs, at room temperature
  • 1 teaspoon vanilla extract
  • ½ cup (120g) whole milk, at room temperature
  • For the glaze:
  • ¾ cup (90g) powdered sugar, sifted
  • 1½ to 2 tablespoons pomegranate juice
  • ¼ cup fresh pomegranate arils, for garnish (optional)

Steps

  1. Preheat the oven to 350°F with a rack in the center. Butter a 9-inch square (or 9-inch round) baking pan and line the bottom with parchment paper, leaving a 2-inch overhang on two sides.
  2. Make the streusel: In a small bowl, stir together the flour, brown sugar, cinnamon, cardamom, and salt. Add the cold butter cubes and work them in with your fingertips until the mixture forms clumpy, pea-sized crumbs. Refrigerate while you make the batter.
  3. Prep the fruit: In a large bowl, toss the plums, figs, and cranberries with the 2 tablespoons granulated sugar and the cornstarch. Let sit 10 minutes to draw out excess juice, then drain off and discard any liquid that pools in the bowl.
  4. Whisk the dry ingredients: In a medium bowl, whisk together the flour, baking powder, and salt.
  5. Cream the butter and sugar: In a large bowl, beat the softened butter and ¾ cup granulated sugar with an electric mixer on medium-high until light and fluffy, 2 to 3 minutes. Beat in the eggs one at a time, then the vanilla, scraping down the bowl as needed.
  6. Combine the batter: Add the dry ingredients in three additions, alternating with the milk in two additions, beginning and ending with the dry ingredients. Mix on low just until no streaks of flour remain — do not overmix.

  9. Make the glaze: In a small bowl, whisk the powdered sugar with 1½ tablespoons pomegranate juice until smooth, adding up to ½ tablespoon more juice for a thin, pourable consistency. Drizzle over the cooled buckle and scatter with the pomegranate arils, if using. Slice into 9 squares and serve warm or at room temperature.

Make Ahead

Pit and chop the plums and quarter the figs up to 4 hours ahead and refrigerate separately — toss with the sugar and cornstarch only right before folding so the fruit doesn't weep. The streusel can be made up to 2 days ahead and refrigerated, and the glaze keeps in a sealed jar in the fridge for up to a week (thin with a few drops of pomegranate juice before drizzling). The buckle bakes best the day you serve it but holds well made a day ahead.

Storage

Cover and keep at room temperature for up to 2 days, or refrigerate for up to 5 days. Reheat individual squares in the microwave for 20 to 30 seconds, or warm the whole buckle in a 300°F oven for about 10 minutes to re-crisp the streusel. The glaze will melt on reheating, so drizzle fresh just before serving.

Substitutions

Blackberries or quartered red plums swap in for the plums by weight, and ½ cup chopped dried figs rehydrated in hot water for 10 minutes stand in when fresh figs are out of season. Frozen cranberries need no thawing. No pomegranate juice? Use blackberry, tart cherry, or lemon juice in the glaze for the same acid lift. For a gluten-free buckle, use a 1:1 gluten-free flour blend in both the batter and the streusel. Buttermilk can replace the whole milk for a more tender, tangier crumb.
