  • 1 pound rotini or fusilli pasta
  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Italian seasoning
  • ½ teaspoon garlic powder
  • 1 cup cherry tomatoes, halved
  • 4 ounces mini pepperoni slices
  • 8 ounces fresh mozzarella pearls (or cubed mozzarella)
  • ½ cup mini bell peppers, thinly sliced into rings (optional)
  • 3 tablespoons grated Parmesan cheese
  • ¼ cup fresh basil leaves, torn

Steps

  1. Cook the rotini in a large pot of generously salted boiling water until just past al dente — about 1 minute longer than the package says. The pasta will firm up when it chills, so this extra minute matters. Drain and rinse briefly with cold water to stop cooking, then let drain thoroughly.
  2. While the pasta is still warm, transfer it to a large bowl. Drizzle with the olive oil and red wine vinegar, then sprinkle with Italian seasoning, garlic powder, ½ teaspoon salt, and several grinds of black pepper. Toss well so every piece gets coated — warm pasta drinks up the dressing better than cold.
  3. Let the pasta cool to room temperature, about 15 minutes. This is the perfect window to halve your tomatoes and prep the rest of your ingredients.
  4. Add the cherry tomatoes, pepperoni, mozzarella pearls, and mini bell pepper rings (if using) to the cooled pasta. Toss gently to combine. Fold in the Parmesan and most of the torn basil, reserving a few leaves for garnish.
  5. Taste and adjust — cold pasta salad almost always needs another pinch of salt and maybe a splash more vinegar for brightness. Cover and refrigerate for at least 30 minutes before packing into lunch containers.
  6. Portion into individual containers for the week. Add a little extra basil on top of each portion right before sealing the lid.

Substitutions

Use turkey pepperoni for a leaner version. Swap mozzarella pearls for cubed provolone or fontina. Add black olives, diced cucumber, or diced bell pepper for more veg. For a vegetarian version, skip the pepperoni and add chickpeas or cubed salami-style plant-based protein. Gluten-free rotini works perfectly here.
