- For the dressing:
- ⅓ cup extra-virgin olive oil
- 3 tablespoons red wine vinegar
- 1 tablespoon fresh lemon juice
- 1 teaspoon Dijon mustard
- 1 clove garlic, grated or very finely minced
- 1 teaspoon dried oregano
- ½ teaspoon kosher salt, plus more to taste
- ¼ teaspoon freshly ground black pepper

Refrigerate in an airtight container for up to 4 days. Do not freeze — the vegetables will turn mushy on thawing. If the salad looks dry on day two or three, revive it with a squeeze of lemon juice and a drizzle of olive oil rather than more salt.
Substitutions
The bean mix is endlessly flexible — use any three cans of beans or lentils you like, or just two cans of chickpeas for a simpler version.
