Ingredients

  • ½ cup popcorn kernels
  • 3 tablespoons neutral oil (canola or coconut), for popping
  • 3 tablespoons chili crisp (use more oil than solids for even coating)
  • 2 tablespoons nutritional yeast (or finely grated Parmesan)
  • ½ teaspoon kosher salt, or to taste
  • Optional: ¼ teaspoon garlic powder, pinch of cayenne for extra heat

Steps

  1. In a large heavy-bottomed pot with a lid, heat the 3 tablespoons neutral oil and 3 popcorn kernels over medium-high heat. Cover.
  2. When the 3 test kernels pop, the oil is ready. Add the remaining popcorn kernels in an even layer. Cover immediately and remove from heat for 30 seconds (this lets all kernels come to the same temperature — fewer unpopped ones).
  3. Return to medium-high heat. Shake the pot occasionally as the popcorn pops. When the popping slows to 2–3 seconds between pops, remove from heat and let sit covered for 30 seconds to catch any late poppers.
  4. Pour the hot popcorn into a large bowl. Drizzle the chili crisp over the top — focus on the oil for even distribution, then spoon the crunchy solids over specific spots.
  5. Sprinkle with nutritional yeast and salt. Toss with two large spoons or your hands (careful, it's hot) until every kernel is coated. Taste and add more salt or chili crisp if needed. Serve immediately.
