Steps

  1. In a medium bowl, beat the softened cream cheese with an electric mixer (or a sturdy whisk) until smooth and fluffy, about 1 minute. Add the powdered sugar and vanilla and beat until completely incorporated and creamy.
  2. Spread the cream cheese mixture into an even layer in a shallow serving dish or pie plate — you want a surface wide enough for dipping, about 8–9 inches across.
  3. Warm the caramel sauce just enough to make it pourable (15–20 seconds in the microwave). Pour it over the cream cheese layer and use the back of a spoon to spread it to the edges.
  4. Scatter the toffee bits or chopped peanuts evenly over the caramel. Finish with a light sprinkle of flaky sea salt — just a pinch, enough to make the flavors pop.
  5. Core the apples and slice them into wedges about ½-inch thick. Toss the slices in a bowl with the lemon juice to prevent browning, then arrange them around the dip on a platter or serve them in a separate bowl.

Storage

Leftover dip (without apples) keeps covered in the fridge for up to 3 days. The caramel may soak into the cream cheese over time, but it still tastes great. Stir before serving if the caramel has pooled. Leftover apple slices should be stored separately in lemon water and drained before serving.

Substitutions

Make your own caramel sauce: melt ½ cup butter with 1 cup brown sugar, whisk in ¼ cup heavy cream and a pinch of salt, simmer 3 minutes. Swap cream cheese for mascarpone for an even richer version.
